Besides being our food advocate, Kirk has a rich background. As an attorney with extensive experience in public policy, he holds a law degree from the University of Richmond as well as a PhD in Education from the University of Virginia. He is a former president of the Virginia Board of Education and has served on numerous government-appointed commissions and studies. Kirk’s role as a leader spans over many educational, children’s health, and artistic organizations.
A practicing vegan for over 20 years, Kirk is naturally conscious of healthy dietary practices and is a huge proponent of reading nutritional labels. Kirk has also owned a food coop, Mostly Veggies, on his farm in Afton. He has been a loyal customer of Ellwood Thompson’s market since its earliest days as the former “City Market” and for a long time, Kirk has witnessed our growth and development from a customer’s perspective.
Nick has a marketing degree from the McIntire School of Commerce at the University of Virginia, consistently ranked the nation’s #1 undergraduate business school. While at UVA he founded the Society of Awakening Souls, an organization for students and community members to come together to learn about consciousness and meditation. He is currently a psychic, astrologer, and healer at the Aquarian Bookshop where he inspires his students and clients to make conscious lifestyle choices.
Years ago, during a 10-day meditation and yoga retreat where all of the food was vegan and organic, Nick became inspired to be vegan himself. He learned that healthy food can be tasty too! Since then, Nick has been dedicated to living a healthy and conscious lifestyle and is passionate about educating others in conscious food choices.
